SPICY MANGO MARGARITA

Cinco de Mayo is on Saturday and there’s no one more excited than me to eat all the tacos and drink all the margs. This is also the year we’ve all been waiting for because since when has Cinco de Mayo ever ended on a Saturday?! (Well, I guess 6 years ago..) Either way, I’m stocked and I thought I would share the margarita recipe I made last night because it was delish and definitely the perfect sipper to have either as your main event or your pregame on sat.

On a bit of a side note, how gorgeous is this bottle of Codigo 1530 tequila?! I have never seen a prettier bottle or colour. The tequila is spiked with a little red wine to give it that gorgeous rose pink. We display ours on our bar cart because it is just so pretty!

For these margs I started by making a fresh mango puree which is way easier than it sounds.

MANGO PUREE

– two mangos

– 5-7 TBS brown sugar (depending on how sweet you like it)

– 1 cup water

To make the mango puree I simply mixed all the ingredients together in my magic bullet and blended for about 3 minutes until smooth (should not have any chunks). Depending on how sweet your mango is, I would start with 5 TBS of brown sugar and add from there. You can also add more water if you find your puree is a little too thick. Once it’s all blended I transferred everything into a squeeze bottle for ease of drink making purposes.

MARGARITA (makes one)

– tajine / salt rim

– 3 jalapeño slices

– juice of 1.5 limes

– 1 or 2 😉 ounces Codigo 1530 tequila

– 3 OZ mango puree

– lots of ice!

– dried mango for garnish

I opted for a tajine/salt hybrid rim to give the drink even more kick but you could also do just plain old salt!

To make the actual margarita, I muddle 3 (or more) jalapeño slices in the bottom of my shaker, then add all the ingredients and about a cup of ice. SHAKE VIGOROUSLY and pour contents into rimmed glass. Top with a full jalapeño slice, lime wheel and/or dried mango (I did all cause I’m extra) and VOILÀ you are ready to salsa.
